OK shut the the front door! This is my FAVORITE new smoothie creation!! I'm calling it Pink Magic because the health benefits are truly magical and the color is a pretty dark pink. I hope you like it as much as I do!! The secret super food ingredients goji & aloe will make your skin glow!! The goji berries are also a great energy boost and hormone regulator.
Blend all ingredients together and enjoy!
1 cup water
2 cups spinach
1/2 cucumber, shoot for organic here & leave skin on
1 lime, peeled
1/4 cup fresh aloe (about a 2-3 inch piece of leaf)

3 large eggs
¾ cup almond butter
½ cup grade B maple syrup
½ cup pumpkin puree
3 tablespoons coconut oil
2 teaspoons fresh lemon juice
1 teaspoon vanilla extract
¼ cup coconut flour
1½ tablespoons cinnamon
2 teaspoons nutmeg
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon lemon zest
½ teaspoon ginger
¼ teaspoon sea salt
Preheat oven to 350 degrees F.
Lightly grease a glass or metal 8.5×4.5 loaf pan then place a piece of parchment paper on the bottom of the pan.
In a high-speed blender or food processor, combine the eggs, nut butter, maple syrup, pumpkin puree, coconut oil, lemon juice, and vanilla. Puree for 30 seconds until smooth and creamy.
Add the coconut flour, cinnamon, nutmeg, baking powder, baking soda, lemon zest, ginger, and sea salt. Blend again for 30 seconds until well combined.
Pour the batter into the prepared loaf pan. Bake for 40-45...

I was asked to speak at career day to a group of elementary school students and a little girl asked "how do you define success?" Wow! Pretty big for a 3rd grader! I thought about it and I explained that success to me is being happy and doing what I love. As I was driving home however I thought ...happiness is a state of mind. We can choose to be happy but what really helped me to create a life I love? So I'm going to take it up a notch from those elementary school students for all you adults out there and give you a little freebie! Here are five strategies for success that I learned early on from a guest speaker during my studies and I'd like to share them with you. 1⁄2 cup raw honey
1/3 cup coconut oil, melted
1 banana, mashed in with all the ingredients
1⁄2 tsp. baking soda
1⁄2 tsp. baking powder
1⁄4 tsp. sea salt
Pinch of cinnamon
1⁄4 cup crushed walnuts (or raw unsalted nut of choice), stirred into mixture at the end.
Preheat your oven to 350 degrees. Mix all ingredients together. Line muffin tin with tin muffin cups or silicone muffin cups. Place ingredients in muffin cups and bake for approx. 15-20 min.
What says fall more than pumpkin?! And it sure feels like fall today. So I recreated my original Energy Ballers into a fall extravaganza! GREAT snack or even breakfast option on busy mornings. Enjoy!
Makes about 20 Balls
2 cups rolled oats
1/4 cup maple syrup or raw honey (local raw would be even better!)
2-3 tsp pumpkin spice
3/4 cup almond butter, no added sugar...ingredients should say almonds
1/3 cup pumpkin puree
(Pictured: I added 1/4 cup goji berries* for some extra nutrition & tartness but these are optional)
Combine all ingredients together in a large bowl. Roll into balls of about 1″ in diameter. I used a melon baller/scoop to get a nice even ball. (You can place dough in refrigerator for twenty minutes until firms up and easier to roll.) Place on a cookie sheet covered in parchment paper & freeze one hour. Store in an airtight container in freezer. Easy, yummy snack is ready to go!
