Kale Salad

Salad:
6 cups kale, stems removed and chopped
1 red pepper, diced
1 orange pepper, diced
1 yellow pepper, diced
1 cup shredded carrots
1 cup shredded purple cabbage
½ small red onion, diced
¼ cup almonds
½ avocado
Dressing:
Juice of 3 lemons (about ½ cup)
2 tsp olive oil
½ tsp sea salt
1 tsp Dijon mustard
Pepper to taste
In a large bowl toss kale, peppers, onions, and carrots together. To make dressing, place all dressing ingredients in a small bowl and whisk together until combined. Pour dressing over veggies. Massage dressing into kale. Top with avocado and almonds. Enjoy!
