Summer Salad


Serve this as a side to an entree, as a snack or even as the main event. Delicious and refreshing!

SUMMER SALAD

Makes about 5 cups

Ingredients:

1 ripe mango, peeled and chopped

1 avocado, chopped

1 large cucumber, peeled, seeded and chopped

1 tablespoon chopped mint

Directions: First make the dressing in the bottom of your large bowl to avoid needing to wash multiple extra dishes. Chop all ingredients then gently toss in the dressing.

HONEY LIME VINAIGRETTE

3 tablespoon fresh lime juice

3 tablespoons extra virgin olive oil

1 tablespoon honey

1/4 teaspoon fine sea salt

Tip: If you pour the honey in the same tablespoon after you’ve used it for the oil it will slide out perfectly instead of sticking to the spoon.

Directions: Whisk all ingredients together until emulsified.
