Fresh Corn and Zucchini Salad with Lime

Serves 4
2 cups fresh corn kernels (4 ears)
2 cups diced zucchini
1 teaspoon lime zest +2 tablespoons lime juice (from about 1 lime)
3 tablespoons extra virgin olive oil
2 tablespoons chopped parsley
½ teaspoon sea salt
½ tsp pepper
Sliced fresh orange and yellow mini bell peppers for garnish
Toss corn with zucchini, lime zest and juice, oil, and parsley in a serving bowl. Add salt and pepper. Let stand 20 minutes before serving. Garnish with peppers. Easy, refreshing and delicious.
