Matcha Green Tea Smoothie Bowl


Unlike smoothies, every time I make a smoothie bowl, I feel like I'm eating a meal. Most of these ingredients I typically use in my favorite breakfast smoothies, but the consistency here is a little thicker so you can eat it with a spoon. The fact that I eat it with a spoon makes me feel nicely full.

Smoothie bowls aren't new to anyone, but I felt like they needed some revived love. And to be honest, I don't make them as often as I'd like either. This smoothie bowl only takes a few minutes to make and is perfect for a healthy or fancy breakfast.

I also recently posted about the benefits of matcha green tea powder. So I decided to add this to the smoothie bowl which makes it the perfect pick me up in the morning. If you missed the post regarding matcha green tea powder, it is high in antioxidants, boosts energy but in a good way unlike caffeine from coffee, and stimulates metabolism. Ingredients:

Serves 2

2 peeled, sliced and frozen ripe bananas

¼ cup chopped ripe pineapple, frozen is best here

¾-1 cup light coconut milk

2 teaspoons matcha green tea powder

1 heaping cup organic spinach

(dash stevia for increased sweetness optional)

Optional toppings include fresh berries, unsweetened coconut flakes, banana slices, Chia seeds, slivered almonds.

Directions:

Add all ingredients to a blender, starting with three-quarter cup coconut milk, and blend on high until creamy and smooth. Add additional coconut milk as you need to help blend. You want the smoothie somewhere between scoopable and drinkable. Taste and adjust flavor as needed adding more bananas for sweetness, more matcha for intense green tea flavor, or more coconut milk for creaminess. Divide between two serving bowls, top with additional toppings, and enjoy!
