Vegan Caesar Superfood Salad


Raw, vegan, filled with superfoods, this caesar is better than the original. If you think you don’t like kale, try this salad and I bet you’ll change your mind. I love caesar salads, but not always the greatest, healthiest ingredients. The swaps I made here will allow you to enjoy it guilt-free and often!

Serves 2

Ingredients:

1 large bunch green kale, washed, stemmed and massaged (place prepped kale in bowl and simply massage for 2-3 minutes...the heat from your hands and the moisture in the leaves will help create a more tender texture)

2 tablespoons raw hemp seeds

Dressing:

1 large garlic clove, pressed or grated

3 tablespoons raw tahini paste

2 tablespoons raw apple cider vinegar

1 tablespoon fresh lemon juice

2 teaspoons organic tamari (wheat-free soy sauce)

Whisk the dressing ingredients in a small mixing bowl, then drizzle over prepared raw kale and toss. Sprinkle with hemp seeds. Enjoy!
