Pumpkin Ballers


What says fall more than pumpkin?! And it sure feels like fall today. So I recreated my original Energy Ballers into a fall extravaganza! GREAT snack or even breakfast option on busy mornings. Enjoy! Makes about 20 Balls

INGREDIENTS: 2 cups rolled oats 1/4 cup maple syrup or raw honey (local raw would be even better!)

2-3 tsp pumpkin spice 3/4 cup almond butter, no added sugar...ingredients should say almonds

1/3 cup pumpkin puree

(Pictured: I added 1/4 cup goji berries* for some extra nutrition & tartness but these are optional)

Instructions: Combine all ingredients together in a large bowl. Roll into balls of about 1″ in diameter. I used a melon baller/scoop to get a nice even ball. (You can place dough in refrigerator for twenty minutes until firms up and easier to roll.) Place on a cookie sheet covered in parchment paper & freeze one hour. Store in an airtight container in freezer. Easy, yummy snack is ready to go!

*Goji berries are loaded with beauty vitamins and minerals, like Vitamins A and C. A vitamin A deficiency is common among acne sufferers, and it can also cause dry hair, dry skin, and weak nails. Vitamin C is a super skin food, as it helps produce collagen to keep our skin firm and youthful. Interestingly, goji is also a complete protein (not typical for fruits) and protein is the building block of our cells, including our skin, hair, and nails. Goji berries also contain the nutrients needed to support a strong immune system, including zinc, iron, and Vitamin C. The high iron content of goji berries also makes them a potent energy booster.
