Healthy Chocolate Truffles
Want an easy, delicious, beautiful gift idea? AND they won't even realize it's healthy!
For the truffles: add 3 tablespoons cacao powder, 1 and 1/2 cups pitted dates, and 3 tablespoons unsweetened shredded coconut to a blender. I have a Nutri bullet which works really well here.
Blend until a paste forms which should only take a few seconds. Roll about a tablespoon of the paste into a ball. Repeat for the remaining paste. Then choose a topping, sprinkle it on the parchment paper, and roll the ball in topping to coat. It's that easy! Some of my favorite toppings include: shredded coconut, crushed walnuts, goji powder, açai powder, cacao nibs. My absolute favorite ... dust with cacao powder....beautiful!
